No-Added-Sugar Banana & Blueberry Bread
Because I could never have too many banana bread recipes!

Ingredients
Wet Ingredients
- 3 overripe bananas
- 2 eggs (beaten)
- 2 tbsp coconut oil (melted)
- 1 tsp vanilla
Dry Ingredients
- 2 cups almond flour
- 1 tsp baking powder
Toppings
- 1 banana (sliced lengthwise)
- 1 cup + 1 tbsp blueberries (preferably fresh, not frozen)
Instructions
- Preheat the oven at 170C or 340F. Line a loaf tin with baking paper.
- Place all the wet ingredients in a large bowl and mix until well combined.
- Place all the dry ingredients in a medium-sized bowl and mix until well combined.
- Fold the dry mixture into the wet mixture and combine.
- Fold in 1 cup of blueberries and combine.
- Spoon the batter into the loaf tin. Place the sliced banana and remaining blueberries on top of the loaf.
- Bake for about 40-45 minutes or until the bread is cooked through. To test if it is ready, insert a knife, if it comes out dry, it’s ready. Once ready, remove from the oven and let it cool down.
- Enjoy with a dollop of nut butter or yogurt for added protein (helps to keep your blood sugar stable).
