Roasted Zucchini with Parmesan Cheese
Super easy and quick to make and a great, healthy addition to any meal!
Ingredients
- 1 large zucchini (cut into 1-cm rounds)
- 2 tbsp extra-virgin olive oil
- 1 tsp garlic powder
- Sea salt & freshly ground black pepper to taste
- ½ cup parmesan cheese (grated)
Instructions
- Preheat oven to 230C or 450F. Line a baking tray with baking paper.
- In a large bowl, toss the zucchini rounds with olive oil, garlic powder, salt & pepper.
- Arrange on a baking tray, top with grated parmesan cheese, and bake for 5 minutes. Then broil for another 3 minutes, or until the cheese is a little brown.
- Serve as a healthy side or add to your favorite salad.
