Roasted Zucchini with Parmesan Cheese

Super easy and quick to make and a great, healthy addition to any meal!

Ingredients

  • 1 large zucchini (cut into 1-cm rounds)
  • 2 tbsp extra-virgin olive oil
  • 1 tsp garlic powder
  • Sea salt & freshly ground black pepper to taste
  • ½ cup parmesan cheese (grated)

Instructions

  • Preheat oven to 230C or 450F. Line a baking tray with baking paper.
  • In a large bowl, toss the zucchini rounds with olive oil, garlic powder, salt & pepper.
  • Arrange on a baking tray, top with grated parmesan cheese, and bake for 5 minutes. Then broil for another 3 minutes, or until the cheese is a little brown.
  • Serve as a healthy side or add to your favorite salad.
