Preheat the oven at 170C or 340F. Line a loaf tin with baking paper.
Place all the wet ingredients in a large bowl and mix until well combined.
Place all the dry ingredients in a medium-sized bowl and mix until well combined.
Fold the dry mixture into the wet mixture and combine.
Fold in 1 cup of blueberries and combine.
Spoon the batter into the loaf tin. Place the sliced banana and remaining blueberries on top of the loaf.
Bake for about 40-45 minutes or until the bread is cooked through. To test if it is ready, insert a knife, if it comes out dry, it’s ready. Once ready, remove from the oven and let it cool down.
Enjoy with a dollop of nut butter or yogurt for added protein (helps to keep your blood sugar stable).
