Pre-heat waffle iron and add a little bit of coconut oil.
Blend all ingredients in a blender until almost smooth.
Pour batter onto the waffle iron and top with chocolate chips. Allow waffles to cook for 7-8 minutes. Let them cook a little longer when the waffle iron goes off, so the waffles get a little crispy. This recipe should make 2 waffles, depending on the size.
Enjoy with your favourite toppings. I like to add nuts, nut butter or seeds for extra protein.
Notes
To make a flax egg mix 1 tbsp ground flaxseeds with 2 1/2 tbsp water in a small bowl. Let it rest for 5 minutes to thicken.
