Vegan Chocolate Waffles

Ingredients

  • 1 cup gluten-free rolled oats
  • ½ cup unsweetened nut milk
  • ½ ripe banana
  • 1 flax egg (see notes)
  • ½ tsp cinnamon
  • ½ tsp baking powder
  • ½ tsp vanilla extract
  • 20 gr dark chocolate chips (unsweetened, dairy-free)

Instructions

  • Pre-heat waffle iron and add a little bit of coconut oil⁣.
  • Blend all ingredients in a blender until almost smooth⁣.
  • Pour batter onto the waffle iron and top with chocolate chips. Allow waffles to cook for 7-8 minutes. Let them cook a little longer when the waffle iron goes off, so the waffles get a little crispy.⁣ This recipe should make 2 waffles, depending on the size.⁣
  • Enjoy with your favourite toppings. I like to add nuts, nut butter or seeds for extra protein⁣.

Notes

To make a flax egg mix 1 tbsp ground flaxseeds with 2 1/2 tbsp water in a small bowl. Let it rest for 5 minutes to thicken.
