Ingredients
1large zucchini(cut into 1-cm rounds)
2tbspextra-virgin olive oil
1tspgarlic powder
Sea salt & freshly ground black pepper to taste
½cupparmesan cheese(grated)
Instructions
Preheat oven to 230C or 450F. Line a baking tray with baking paper.
In a large bowl, toss the zucchini rounds with olive oil, garlic powder, salt & pepper.
Arrange on a baking tray, top with grated parmesan cheese, and bake for 5 minutes. Then broil for another 3 minutes, or until the cheese is a little brown.
Serve as a healthy side or add to your favorite salad.
