Banana & Cinnamon Waffles

These waffles are super easy to make, gluten-free and healthy!

Ingredients

  • 2 cups gluten-free rolled oats
  • 2 eggs
  • 1 cup unsweetened almond milk
  • 1 ripe banana
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp baking powder

Instructions

  • Preheat waffle iron and add a tiny bit of coconut oil.
  • Blend all ingredients in a blender until almost smooth.
  • Pour batter onto a waffle iron and allow waffles to cook for 5-7 minutes. Let them cook a little longer from when the waffle iron goes off, so the waffles get a little crispy.
  • Continue with the rest of the batter. Depending on the size of the waffle iron, this recipe should make 4-5 waffles.
  • Enjoy with your favourite toppings. My favourite ones are blueberries, walnuts & maple syrup.
